Figs, Pecans and Oat Whole Spelt Sourdough
Ok, this might’ve been one of the most difficult breads I’ve made so far. Spelt grains are something new to me, specially because in Brazil 48 OZ (1KG) of whole spelt can cost you up to US$90. On my last trip to the US I brought some with me and this weekend I began experimenting. My first three basic loaves were a catastrophe. For the fourth try I found this recipe in one of my favorite books and just went for it. The author did give me some understanding about spelt, specially the shorter fermentation period and the high density of the finished loaf. Scoring was difficult because of the amount of pecans and figs that went in to it, otherwise I am having a very good time with this one!
